Basil Pesto Egg English Muffin

I get so tired of eating the same things meal after meal. A couple weeks ago I threw together something quick with what I had in the fridge and now I am addicted to it. Just threw an egg white in a pan and while that was cooking up I put an English muffin in the toaster oven. When the egg white was almost thoroughly cooked I put some feta cheese on one half of the muffin to melt up a bit.  Once all was done I added some basil pesto and a dash of red pepper flakes. Mmmm, so good.

The constant hunt for new and exciting smoothies is always on! Something about being able to throw my meal into a glass and go is truly awesome for me. Avocado Pudding

Yes, I do have a slight obsession with the avocado lately, but it is healthy, right? I have been slipping it into the Lemur King’s breakfast oatmeal, making quesadillas with them, but pudding? I am having the hardest time adjusting to any type of shift in my normal daily food habits. I know it’s selfish and it may not be the best thing for me, but I just love food WAY too much! Shame on me that I use the fact that I am in shape to do as I please when it comes to eating. Though I have noticed lately that my skin is getting that “sag” to it. What the heck is that?! I am not even 40 yet! Maybe if I keep finding things this yummy looking to eat then the transition won’t be so hard on me? Homemade Black Bean Nachos

I have been noticing a pattern lately in my eating habits… It is a Mexican kick again. I swear, sometimes I could eat the same foods for a month straight, then all of a sudden, I can’t take another bite of “it” for six months! Today I decided to throw myself together some black bean nachos while I was making the Lemur King his foods. Snagging a bit of the black beans and rice, those were the first to go on the tortilla chips… I ended up throwing on some tomatoes that needed to be used up, a little green onion, and cheese of course. Went out of my way to bake them in the oven to spoil myself a bit. Just threw them on 350 degrees just until the cheese melts. For myself, I tend to go a bit overboard here, baking until all edges are brown and crispy. Once cheese is melted, carefully throw onto a plate, add Ortega Medium sauce, and sour cream Full of awesomeness…
